cherry cheesecake....circa 1996 :)



This is an amazing cherry cheesecake recipe that i used frequently for my friends birthdays in high school! It is more of a soft cheesecake.

CJS Cherry Cheesecake                        recipe adapted from Richard Deacon's Microwave Cookery

Fabulous Filling

1 (8oz) pkg. cream cheese
2 eggs, well beaten
1/2 cup sugar
1/8 teaspoon salt
1 tsp vanilla extract
1/8 tsp almond flavouring
1 and 1/2 cups of dairy sour cream
1 can of cherry pie filling

Gorgeous Graham Cracker Crust

1 and 1/4 graham cracker crumbs
1/4 cup of butter

Mix crumbs and butter. Press over bottom and up side of a 9" square glass dish (microwave safe).
Cook on HIGH 1-1/2 to 2 minutes.


Prepare Graham Crust, set aside. In a large bowl, stir cream cheese until smooth. Stir in eggs, sugar,salt,vanilla and almond flavouring. Beat until smooth. Stir in sour cream. COOK on LOW
( very important!) 10-12 minutes in the microwave, stirring every 2 minutes. Pour into baked crust. Cook on low 1 and 1/2 minutes. Rotate 1/4 turn. Cook on LOW 1-1/2 to 2-1/2 minutes longer until the center is set. Refrigerate 3 to 4 hours. Pour cherry pie filling on top.
